Banana Oatmeal Bars
INGREDIENTS
3 large ripe bananas
1/2 cup creamy almond butter (or other nut butter)
2 cups rolled oats
DIRECTIONS
Preheat oven to 350. Brush 9x9 baking pan with coconut oil. Mash bananas in a bowl until they are creamy. Stir in nut butter and combine. Add rolled oats and combine. Transfer mixture to prepared baking dish and smooth into even layer. Bake on center rack 18-20 minutes until bars are golden-brown and set. Allow bars to cool completely before slicing and serving.

Coconut Almond Butter
INGREDIENTS
2 cups raw almonds
1 tbsp. coconut oil
1 tbsp. shredded, unsweetened coconut
DIRECTIONS
Place almonds, coconut oil, coconut in food processor. Process on high until smooth and creamy. Store at room temperature.
